Collins tortellini soup

- 1 pound spicy or mild Italian ground sausage

- 4 tablespoons butter

- 1/2 white onion – diced

- 1 oz red wine

- 1 tablespoon minced garlic

- 1 tablespoon tomato paste

- 8 cups chicken broth

- 2 cups water

- 1 package of Tortellini of choice (we like cheese or chicken)

- salt to taste

- black pepper to taste

- 1 tablespoon The Collins Family Bundle Original Seasoning

- 2 cups heavy cream

- 4 cups washed baby spinach

- chopped bacon or bacon bits and grated parmesan cheese (optional)

1) In a large pot (we use a Dutch oven but you can use any pot) brow sausage 5-6 minutes. Use a slotted

spoon to remove from the pot and set aside.

2) In the same pot, add butter and sauté onions over medium heat, add red wine, cook until onions are

translucent. Add garlic and sauté for another minute until fragrant. Add tomato paste and mix until

incorporated.

3) Add chicken broth, water, salt, pepper, The Collins Family Bundle Original Seasoning and bring to a

boil. Add tortellini until cooked. Stir in spinach, and heavy cream. Add sausage. Taste and add salt and

pepper if needed. Serve garnished with parmesan cheese and/or bacon.
